When new cooks come to work for me, they obviously make mistakes at the beginning or there's some messiness to the presentation. What I always say to them is: 'If you were cooking this for your mother or your girlfriend, would you make those mistakes?' ↗
It's great being your own boss, but then, you know, you make your own mistakes, you know, and you own them. You know, so it's empowering, and it's also humbling along the way. ↗
People do make mistakes and I think they should be punished. But they should be forgiven and given the opportunity for a second chance. We are human beings. ↗
